Karjalanpiirakat (Karelian Pies) Recipe

Ingredients:

2 cups of rye flour
1 cup of wheat flour
1 teaspoon of salt
1 tablespoon of oil
1.5 cups of water
1 cup of rice porridge (cooked rice with water and salt)
1 cup of milk
1 tablespoon of butter
Instructions:

In a bowl, mix together the rye flour, wheat flour, and salt.

Add the oil and water gradually, mixing until you have a smooth dough. It should be soft but not sticky. Let the dough rest for about 30 minutes.

In a separate bowl, mix the cooked rice porridge with milk and butter. This will be the filling for the pies.

Preheat your oven to 475°F (245°C).

Divide the dough into small balls, about the size of a walnut.

Roll out each ball of dough into a thin oval shape, about 1/8 inch thick.

Place a spoonful of the rice porridge filling onto the center of each oval.

Fold the edges of the dough over the filling, leaving the center open. Press the edges firmly to seal.

Place the pies on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 10-15 minutes, or until the pies are golden brown.

Remove from the oven and brush the tops of the pies with melted butter for extra flavor.

Serve the Karjalanpiirakat warm or at room temperature, with a dollop of butter or your favorite topping, such as egg butter or cheese.
