Heat 2 tablespoons of butter in a pan over medium heat, then sauté a chopped onion (if using) until soft. Add 500g of thinly sliced reindeer meat and brown it, stirring occasionally. Once the meat is browned, pour in 200ml of water or beer, season with salt and black pepper, and let it simmer on low heat for 1–2 hours until the meat is tender and the liquid has reduced. Stir occasionally and add more liquid if needed. Serve hot with mashed potatoes and lingonberry jam for a traditional Finnish meal.
