An intersting thing about the Mongols (and Timurids for that matter) is that the only ship they get is the Dhow (tier 1 ship for islamic factions) which is the worst boat in the game. This means you can control the seas pretty much unopposed and use this to quickly move troops (and possibly snipe costal settlements in the middle east or Crimea).
French Mounted Archers are an incredibly strong unit, and you certainly can get them out in time for the initial invasion if you focus on growth, especially in the Middle East with how quickly cities like Jerusalem and Antioch can grow, especially if you seize them early. As a late-game unit (they require a pretty high tier barracks in a large city), I wouldn't expect most beginner or intermediate player's to be able to pump them out in a timely manner, but it certainly is possible. I'll make a note about them. Thank you.
I would mention the French Mounted Archers for france, you can get them out in time if you focus on city growth, these archers actually outstat most of the mongol line
