Like you can get within a indiscernible error margin with traditional methods that don't require the excess time and counter space. why would you care? think about it this way, do you think you're still going to be sous videing things 5 years after you buy it? is it an enjoyable cooking process? does it add enough to the taste to be worth the wet lab like cooking experience?
