in 2023 there's no point. there was a brief moment where they had enough social capital that you and others might enjoy the novelty of eating a food that was cooked with a 0.01 factor of safety wrt the perfect cooking temp but that has passed.

Like you can get within a indiscernible error margin with traditional methods that don't require the excess time and counter space. why would you care? think about it this way, do you think you're still going to be sous videing things 5 years after you buy it? is it an enjoyable cooking process? does it add enough to the taste to be worth the wet lab like cooking experience?

I very much doubt it
